Pimento Cheese Sirloin Sliders
Recipe adapted from Rachael Ray Magazine.
Ingredients:
- 16 slices white or wheat bread
- 1 1/2 lbs ground beef sirloin
- 2 to 3 garlic cloves, grated or finely chopped
- 3 to 4 tablespoons grated onion
- 1 tablespoon paprika or sweet smoked paprika
- 1/2 cup lager beer
- Salt and pepper, to taste
- Olive oil, for cooking
- 2 tablespoons butter
- 2 tablespoons all-purpose flour
- 1 cup milk
- 1 cup shredded sharp yellow cheddar cheese
- 3 tablespoons well-drained chopped pimentos
- 1 tablespoon yellow mustard
- Several drops hot sauce, to taste
- 8 dill pickle slices
Preparation:
Preheat the oven to 350°F (175°C). Using a biscuit cutter or a knife, cut the bread into 3-inch rounds or trim into slider-sized squares. Arrange the bread pieces on a baking sheet and bake until lightly toasted and golden, about 8 to 10 minutes.
In a bowl, combine the ground sirloin with the garlic, onion, paprika, beer, and salt and pepper. Mix gently and form into eight patties, about 3 inches across. Drizzle the patties with a little olive oil. Heat a griddle or a large cast-iron skillet over medium-high heat and cook the patties 3 to 4 minutes per side, until nicely browned and cooked through.
While the patties cook, prepare the pimento cheese sauce: in a saucepan, melt the butter over medium heat. Whisk in the flour and cook briefly, then gradually whisk in the milk. Simmer until the mixture thickens, about 3 minutes. Season with salt and pepper, then stir in the shredded cheddar until melted. Fold in the chopped pimentos, mustard, and a few drops of hot sauce, adjusting seasoning to taste.
Assemble the sliders by placing a cooked patty on each toasted bread piece. Spoon a generous amount of the pimento cheese sauce over the patty, then top with another slice of toast. Garnish each slider with a dill pickle slice and secure with a toothpick.
These sliders are best served warm and make an easy, crowd-pleasing appetizer for celebrations and game-day gatherings.
