Watermelon Mint Popsicles Recipe — Refreshing Summer Treat

Give me a moment — I’m still reeling from the first bite of summer that hit me with these watermelon pops.

Okay, I’m good now.

These popsicles are the essence of summer. They revolve around watermelon, the unmistakable taste of warm days, and they’re frozen, refreshing treats that cool you down on sweltering afternoons.

They’re fast and simple to prepare, a delicious justification to eat more watermelon, and a healthy, refined-sugar-free option for you and your kids.

Fair warning: once you make these, neighborhood kids (and their parents) will likely swarm your house asking for popsicles. Consider yourself officially popular.

Think of it as “my milkshake brings all the boys to the yard,” but in popsicle form — in this case it’s sticky-handed little ones lining up for seconds and thirds.

This recipe is great for getting kids involved. My son loved pressing the blender buttons and helping with the process.

The method is ridiculously easy: add watermelon, mint, honey, and lime juice to a blender, puree until smooth, then pour into molds and freeze. That’s it—easy peasy.

  • Yield: 9 popsicles (if each mold uses 1/3 cup of liquid)

Ingredients

  • 4 cups diced watermelon
  • 10 mint leaves
  • 1–2 tablespoons honey (see notes)
  • Juice of 2 small limes

Instructions

  1. Add the watermelon, mint, honey, and lime juice to a blender and blend until very smooth.
  2. Pour the mixture into popsicle molds and freeze until solid, typically several hours or overnight.

Notes

Honey amount depends on how sweet you like your popsicles. Two tablespoons yields a sweeter result; one tablespoon is milder. Taste the blended mixture and add more honey if desired.

The blended mixture yields about 3 cups of liquid.

Each popsicle is approximately 1 Weight Watchers SmartPoint.
