When berry season arrives I look forward to it all year. Summer berries are sweet, juicy, and often affordable when they’re in season. I tend to buy extra when they’re on sale and use them in salads, breakfasts, and desserts. This Mixed Berry Graham Cracker Icebox Cake is one of my favorite no-bake treats — light, fruity, and so easy to put together.
The cake uses a handful of common ingredients you likely already have. If you prefer, swap the vanilla whipped cream for instant chocolate or vanilla pudding for a different flavor and texture. Either way, this dessert comes together quickly and tastes best after it chills overnight.

Use any combination of fresh fruit you like — strawberries, blueberries, raspberries, and blackberries work beautifully together. The layers of graham crackers soften as they sit in the cream, creating cake-like slices that are creamy, fruity, and satisfying.

How to make this Icebox Cake:
- Place a mixing bowl in the freezer for about 30 minutes to chill.
- Wash and slice the berries or other fruit you plan to use.
- In a large chilled bowl, beat very cold heavy whipping cream with powdered sugar and vanilla until stiff peaks form.
- Divide the whipped cream into four portions.
- Spoon a small amount of whipped cream onto the bottom of a 9×13-inch pan and spread it evenly.
- Arrange a layer of graham crackers over the whipped cream, trimming crackers to fit as needed.
- Spread about one-quarter of the whipped cream over the crackers, then add one-third of the fruit evenly on top.
- Add another layer of graham crackers and press gently into the cream.
- Repeat layers, finishing with the remaining whipped cream on top.
- Cover and refrigerate overnight so the crackers soften and the flavors meld. Serve chilled and store leftovers in the refrigerator.

💡 PRO TIP:
Use any fruit you enjoy for this icebox cake. You can also add a layer of instant pudding between the layers for extra richness.

This vanilla cream base is versatile — try adding chocolate chips, chopped nuts, caramel, marshmallows, or shredded coconut to customize the cake. It’s a great make-ahead dessert for summer gatherings and potlucks.

Ingredients
- 3 ½ cups very cold heavy whipping cream
- ½ cup powdered sugar
- 2 teaspoons vanilla extract
- Graham crackers
- 4 cups fresh fruit — strawberries, blueberries, raspberries, blackberries, or a combination
Instructions
- Place mixing bowl in the freezer about 30 minutes before using to chill.
- While the bowl chills, wash and slice the fruit.
- In a large mixing bowl, beat heavy whipping cream, powdered sugar, and vanilla until stiff peaks form.
- Divide the whipped cream into fourths. Spread a small spoonful of cream evenly on the bottom of a 9×13-inch pan.
- Arrange graham crackers to cover the cream, trimming to fit if necessary.
- Spread ¼ of the whipped cream over the crackers, then add ⅓ of the fruit. Optionally add a bit more whipped cream to level the fruit.
- Add another layer of graham crackers, pressing gently into the cream. Repeat layers and finish with the remaining whipped cream on top.
- Cover and refrigerate overnight to allow the crackers to soften and the flavors to meld.
- Garnish with additional fruit if desired and serve chilled. Store leftovers in the refrigerator.
Notes
PRO TIP: Any type of fruit works in this icebox cake. For extra creaminess, add instant vanilla pudding between layers.
