Step 3
Add your toppings just before serving so the toast stays crisp. This is especially important for tomato-and-basil crostini, since tomatoes release juice once cut—either top them immediately before serving or offer the tomato mixture separately so guests can add it themselves.

Favourite Party Crostini

Non-stick frying pan
Ingredients
- 1 baguette
- 1 tbsp olive oil, extra virgin
- 1 pear, firm but ripe, thinly sliced
- 8 slices goat cheese
- 8 slices prosciutto
- 6-8 cherry tomatoes, quartered
- 3-4 basil leaves, sliced
- Salt
- 8 slices smoked salmon
- 1 cup double cream / heavy cream (250 ml)
- 8 leaves rocket / arugula
- Chilli infused olive oil, optional
Instructions
- Slice the baguette and toast the slices in olive oil in a frying pan until crisp.
- Combine quartered cherry tomatoes, basil, 1/2 tsp olive oil and a pinch of salt. Set aside.
- Slice the pear and goat cheese and set aside.
- If you need whipped cream, pour double cream into a sealed jar and shake until thickened (about 5 minutes), or whip with a hand mixer.
Crostini with pear and goat cheese
- Top each crostini with 2 thin slices of pear, one slice of goat cheese and a drizzle of chilli infused olive oil.
Crostini with cherry tomatoes, basil and sea salt
- Spoon the tomato and basil mixture onto each crostini just before serving.
Crostini with prosciutto and arugula
- Top each crostini with a slice of prosciutto and a small arugula leaf.
Crostini with smoked salmon and whipped cream
- Top each crostini with a slice of smoked salmon and a small dollop of whipped cream.
