Fluffy Lemon Poppy Seed Pancakes with Zesty Glaze

Yesterday was brutal. I haven’t felt that irritable in a long time. I’m usually upbeat—sure, there are days when I’m cranky—but yesterday I was a walking disaster. I’d slept only 1.5 hours, and after that I had to get up for a 5:30am gym session in freezing weather. I tried to act enthusiastic while my coffee cooled in minutes, only to find the nearby coffee shop closed. Pretending to be chipper is hard when you’re exhausted, groggy and deprived of caffeine. I nearly lost my mind.

I remember back when I first started this blog and was coaching at four or five CrossFit gyms, getting up at 4am, going to bed around midnight and squeezing in two to three workouts a day. I was running on fumes—my cortisol was wrecked and my body was tired—but I still managed. I couldn’t do that now. Is this what getting older feels like? Is that why people stop going to the gym after having kids—because sleep disappears and functioning becomes impossible? That’s one more item for my “having a baby” pros-and-cons list. Maybe someday pros will sneak onto the plus side. Maybe.

On a different note, I finally watched Magic Mike XXL for the first time and wow — it’s pretty raunchy. Are male strippers really that polished and charming in real life? The strip clubs I’ve been to—female-only—didn’t involve that much charm; it was a lot less glamorous. While watching the movie, did you catch yourself thinking how lucky Channing Tatum’s wife is? She’s a major woman crush—whenever it’s Wednesday. And did you see her at the Golden Globes? Dayum, Gina.

Right now I’m on a flight to San Antonio—first time there. To be honest, I’m not great with Texas geography; I just know it’s south of me. But I’m excited because I’m staying with my friend Cassy from Fed and Fit to work on a small project. We’ll be shooting photos and video, so I packed way too many outfits for two days—probably ten or more. Overboard? Maybe. Worth it? Absolutely. Can’t wait to share what we’re working on.

Lemon Poppyseed Pancakes

Ingredients

  • 3 eggs, whisked
  • 3/4 cup almond milk (unsweetened)
  • 2 tablespoons raw honey
  • 1 teaspoon vanilla extract
  • zest of 1 lemon
  • juice of 1 lemon
  • ½ cup coconut flour
  • ½ cup tapioca or arrowroot flour
  • ½ teaspoon baking powder
  • ½ teaspoon baking soda
  • pinch of salt
  • 23 tablespoons poppyseeds
  • coconut oil or ghee, for greasing pan

Instructions

  1. Whisk the wet ingredients together in a large bowl: eggs, almond milk, honey, vanilla extract, lemon zest and lemon juice.
  2. While whisking, add coconut flour, tapioca (or arrowroot) flour, baking powder, baking soda and a pinch of salt. Whisk until the batter is combined, then fold in the poppyseeds.
  3. Grease a griddle or skillet and heat over medium. Using a ladle or ice cream scoop, portion batter to make 9–12 pancakes depending on desired size. When bubbles form on the surface, flip and cook the other side—about 2–3 minutes per side.
  4. Serve with maple syrup and enjoy.
