  • 36 asparagus spears, thick ends trimmed (snap off the woody ends)
  • 2 tbsp sugar-free maple syrup
  • 1–2 tsp Dijon mustard
  • Pinch of red chili flakes

Instructions to Assemble Easy Keto Bacon Wrapped Asparagus Bundles

  1. Preheat the oven to 425°F (220°C). Line a large baking sheet with foil or parchment paper for easy cleanup.
  2. To remove excess fat and soften the bacon for wrapping, place two paper towels on a plate, arrange 6 slices of bacon, cover with two more paper towels, add the remaining 6 slices, and top with two additional paper towels. Microwave for about 2 minutes. This step renders some fat while keeping the bacon pliable.
  3. Group the asparagus into bundles of three spears. Wrap each bundle with one slice of partially cooked bacon and place the bundles on the prepared baking sheet.
  4. Prepare the glaze by combining the sugar-free maple syrup, Dijon mustard, and a pinch of red chili flakes in a small bowl. Adjust mustard and chili to your taste.
  5. Roast the bundles in the oven for 8–10 minutes. Turn each bundle, then brush generously with the glaze using a silicone basting brush. Roast for another 8 minutes or until the bacon is nicely browned and the asparagus is tender but still crisp.
