Ingredients

Whipped Feta and Honey

  • 4 oz cream cheese, room temperature
  • 8 oz feta, room temperature
  • 1 tsp white wine vinegar
  • 2 tbsp honey
  • 1 lemon, zest only
  • 8 leaves basil
  • 1/2 bunch parsley, leaves only
  • 1/4 cup chives
  • 1 small garlic clove, grated

Phyllo Bites

  • 1 roll phyllo dough, thawed
  • 4 oz butter, melted
  • 1/2 cup pistachios, crushed

Instructions

  • Make the whipped feta: In a food processor combine cream cheese, feta, white wine vinegar, honey, lemon zest, basil, parsley, chives and grated garlic. Process until smooth and creamy.
  • Layer the phyllo: Brush melted butter between three layers of phyllo. On the fourth layer spread a thin layer of whipped feta and sprinkle with crushed pistachios. Repeat the sequence (three buttered layers, one feta/pistachio layer) until the phyllo is used, finishing by brushing the top layer with butter.
  • Cut and skewer: Cut the stacked phyllo into 1-inch strips. Fold each strip into an S pattern and thread onto skewers.
  • Chill: Arrange the skewers on a plate, cover tightly with plastic wrap and refrigerate at least 30 minutes. They can be prepared earlier the same day.
  • Bake: Preheat the oven to 400°F (205°C). Place skewers on a baking sheet and bake 25–28 minutes, until golden brown.
  • Finish: Drizzle with honey while still hot and garnish with chopped chives before serving.
