Simple, cozy, and seasonal—these creamy pumpkin apple quesadillas combine a velvety pumpkin sauce with sharp cheddar and crisp apple slices for a sweet-savory fall treat.

Ingredients
- 1 teaspoon butter
- 2 tablespoons pumpkin vodka sauce
- 1.5 oz (about 1/3 cup) shredded cheddar cheese
- 1/4 honeycrisp apple, thinly sliced
- 1 8-inch flour tortilla
Instructions
- Heat butter in a cast iron skillet over medium-high heat.
- Once the butter melts, place a tortilla in the skillet and spread the pumpkin sauce evenly over the surface.
- Sprinkle cheddar cheese, then arrange apple slices over half the tortilla. Reduce heat to medium if needed.
- When the cheese softens and the underside of the tortilla turns golden, fold the tortilla in half and press down. Cook until golden brown on both sides, flipping if necessary.
- Transfer the warm quesadilla to a cutting board and let it cool a few minutes before slicing into three or four triangles.
