2 pounds ground beef
½ cup rice crumbs or gluten-free bread crumbs
1 large egg
¼ cup grated Parmesan cheese
1 small yellow onion, grated
2 tablespoons minced garlic
3 teaspoons tomato paste
1 ½ teaspoons sea salt
1 teaspoon coarse ground black pepper
2 teaspoons dried oregano
2 teaspoons dried basil
2 teaspoons dried parsley
1 (24-ounce) jar marinara sauce

Instructions

1. In a large mixing bowl, combine the ground beef, rice crumbs (or gluten-free breadcrumbs), egg, Parmesan, grated onion, minced garlic, tomato paste, salt, pepper, oregano, basil, and parsley. Mix gently until everything is evenly incorporated—avoid overworking the meat so the meatballs stay tender.

2. Set your slow cooker to low and pour a thin layer of marinara sauce into the bottom of the insert to prevent sticking.

3. Shape the meat mixture into golf ball–sized meatballs and arrange them in a single layer in the slow cooker. Once all the meatballs are in place, pour the remaining marinara sauce evenly over them.

4. Cover and cook on low for 3 to 4 hours. Cooking times vary by slow cooker, so check after 3 hours. The sauce should be bubbling and the meatballs browned on the outside when they’re done. Serve warm over pasta, polenta, or as an appetizer.
