Creamy Lemon Poppy Seed Dressing Recipe for Salads and Marinades

This healthy creamy lemon poppyseed dressing uses only seven simple ingredients — including the salt — and contains none of the preservatives or additives found in many bottled dressings.

I don’t usually make salad dressings from scratch, mostly because it’s easy to grab a bottle at the store. But this creamy lemon poppyseed dressing shows how quick and simple homemade dressing can be.

Making Creamy Lemon Poppyseed Dressing

Making this dressing is effortless. Whisk together plain Greek yogurt, olive oil, white vinegar, a granulated sweetener (or stevia baking blend), lemon juice, lemon zest, poppy seeds and a pinch of salt in a medium bowl until smooth. It comes together in minutes and tastes fresh and bright.

A Few Notes for Creamy Lemon Poppyseed Dressing

Use either low-fat or non-fat plain Greek yogurt — I used non-fat and it was delicious. Many poppyseed dressings call for mayonnaise, which increases the fat content. Greek yogurt keeps this version lighter while still creamy.

Sweetener choice matters. Granulated sugar works well, but if you use zero-calorie sweeteners like stevia or monk fruit, be sure you understand the substitution ratio. Some zero-calorie “baking blends” are formulated to replace sugar one-to-one and are appropriate for this recipe. Regular concentrated granulated forms of stevia or monk fruit are much sweeter than sugar: start with a tiny amount (for example, one packet or ¼–½ teaspoon), taste, and adjust as needed rather than adding the full amount at once.

This recipe uses white vinegar for a clean, bright acidity that doesn’t compete with the lemon. You may substitute apple cider vinegar if you prefer a slightly fruitier tang.
