
Who doesn’t love guacamole? I certainly do. Here’s a fresh Greek-inspired twist: guacamole with feta cheese. My first trip to Mexico left me craving guacamole every day. The creamy texture and bright flavors are irresistible—though I’ve never been a big fan of cilantro. I know I’m not alone; many cooks (Ina Garten included) prefer to minimize or skip it. Cilantro has a strong flavor, and people tend to either love it or dislike it. For this recipe I leave it out, but feel free to add cilantro to taste.

Avocados are incredibly nutritious—packed with vitamins, minerals and healthy fats—so I was surprised when my little boy initially refused them. I even tried mixing avocado with banana to disguise it, but he seemed to sense something different and ate very little. Plain avocado didn’t interest him, but when I seasoned it well with sea salt, cumin and lime juice, he dove in. Kids often prefer bold, seasoned flavors, so a well-balanced guacamole can make all the difference.

A friend, Marta, introduced me to an inspired variation: adding crumbled feta. At first I was skeptical—guacamole with feta sounded odd—but the combination is delightful. Marta mentioned she learned the idea from Little Collins Cafe in New York, where they serve smashed avocado on toast topped with feta, red pepper flakes and pepitas. Feta adds a salty, tangy contrast that brightens the avocado and may be just the thing to make picky eaters interested.

- 3 ripe avocados , mashed
- 1/2 red onion , finely chopped
- 2 garlic cloves , minced
- 1 small tomato , chopped
- 1/4 cup crumbled good-quality feta cheese
- 1/4 teaspoon sea salt
- 1/4 teaspoon ground cumin
- 1/2 lime , juiced
Instructions

Combine the finely chopped red onion, minced garlic, sea salt, ground cumin and lime juice in a bowl.
