Ingredients
- 16 ounces mascarpone cheese
- 1 cup canned pumpkin
- ½ cup light brown sugar
- 2 teaspoons ground cinnamon
- ½ teaspoon ground nutmeg
- ¼ teaspoon ground ginger
- ¼ teaspoon ground allspice
- ¼ teaspoon ground cloves
- 1 cup strong brewed coffee
- ¼ cup coffee liqueur (such as Kahlua)
- 2 cups heavy cream
- ¼ cup granulated sugar
- 2 teaspoons vanilla extract
- 54 ladyfinger cookies (about 16 ounces)
- Additional cinnamon and chocolate shavings to top (optional)
Instructions
- In a large bowl, combine mascarpone, pumpkin, brown sugar, and the spices until smooth and well blended. In a separate bowl, whip the heavy cream with granulated sugar and vanilla until stiff peaks form. Fold half of the whipped cream into the pumpkin-mascarpone mixture to create a light mousse; reserve the remaining whipped cream for topping and chill it until needed.
- Stir together the brewed coffee and coffee liqueur. Quickly dip the ladyfingers into the coffee mixture (don’t soak them) and arrange a single layer in a 13×9″ dish. Spread half of the pumpkin mousse over the ladyfingers, then repeat with another coffee-dipped layer of ladyfingers and the remaining mousse. Smooth the top and refrigerate for at least 2 hours or overnight to set.
- Before serving, pipe or dollop the reserved whipped cream over the tiramisu and dust generously with cinnamon and chocolate shavings. Serve at room temperature for best flavor.
