Pumpkin Spice Chocolate Chip Cookies

These cookies combine classic chocolate chips with warm pumpkin spice and a surprising hint of molasses. The molasses brings a caramel-like richness that enhances the cinnamon and nutmeg in the pumpkin spice, while the pumpkin puree contributes a tender crumb. If you love seasonal flavors, these cookies are an easy and satisfying way to showcase pumpkin beyond pies and lattes.

We’re a pumpkin-loving household — we don’t always embrace every pumpkin-flavored product on the market, but when it comes to baked goods, pumpkin is a must. These cookies are soft, slightly chewy, and full of fall flavor without being overly sweet. They make a lovely treat with coffee, tea, or a cold glass of milk.

Why Molasses?

Molasses pairs surprisingly well with pumpkin and spice. It adds subtle molasses notes — a deep, slightly smoky sweetness — that complement cinnamon, nutmeg, and vanilla. In these cookies, the molasses helps maintain moisture for a soft, tender texture and amplifies the overall warmth of the spice blend without overpowering the pumpkin.

What Is Pumpkin Spice?

Pumpkin spice is a general name for a warm blend of spices typically used in pumpkin-flavored foods. Common components include cinnamon, nutmeg, ginger, and cloves. Many brands sell a pre-mixed “pumpkin pie spice” that makes adding the flavor effortless. A pinch or two of this spice blend brings immediate autumnal character to baked goods, beverages, and more.

Full Recipe Card:

Ingredients

  • ½ stick (4 tablespoons) butter, softened
  • 1 cup pumpkin puree (not pumpkin pie filling)
  • 1 cup granulated white sugar
  • 1 large egg
  • 1 teaspoon vanilla extract
  • ¼ cup molasses
  • 1 teaspoon baking soda
  • 2 teaspoons ground cinnamon
  • ½ teaspoon ground nutmeg
  • 2 teaspoons baking powder
  • ½ teaspoon salt
  • 2 cups all-purpose flour
  • 2 cups chocolate chips

Instructions

  1. Preheat the oven to 350°F (175°C). Line a baking sheet with parchment paper or a silicone mat.
  2. In a large bowl, cream the softened butter and sugar until light and slightly fluffy. Add the egg, vanilla, and pumpkin puree and beat until evenly combined.
  3. Stir in the molasses until fully incorporated and the batter is smooth.
  4. In a separate bowl (or directly into the same bowl if using one-bowl method), whisk together the flour, baking soda, baking powder, cinnamon, nutmeg, and salt. Add the dry mixture to the wet ingredients in portions, mixing until just combined. Avoid overmixing to keep the cookies tender.
  5. Fold in the chocolate chips by hand so they are evenly distributed throughout the dough.
  6. Scoop cookie dough onto the prepared sheet pan using a cookie scoop or tablespoon, spacing cookies an inch or two apart. The dough will not spread excessively, so you can place them relatively close.
  7. Bake for 10–12 minutes, or until the edges are set and centers are no longer glossy. The cookies will continue to firm as they cool.
  8. Allow cookies to cool on the baking sheet for a few minutes, then transfer to a wire rack to cool completely. Serve and enjoy.

Notes

These cookies bake up soft and plump rather than flat and thin. For chewier results, slightly underbake by a minute and allow them to finish on the hot baking sheet. Use canned pumpkin puree (not pumpkin pie filling) for consistent results. If you prefer a milder molasses flavor, reduce to 2 tablespoons.
