I may have gone a little overboard at the store stocking up for pumpkin bread testing, which left James and Mike complaining that I took up a big chunk of cabinet space with canned pumpkin. Their protests didn’t stop me — I used those extra cans to make this Pumpkin Spice Latte Tiramisu, and yes, I’ve been enjoying it daily.

There was a lot of tiramisu, and it was far too delicious to let go to waste.

I’m not one to force pumpkin into every conceivable dish just because it’s fall — pumpkin sausage or pumpkin chips are a hard pass. But certain recipes naturally welcome pumpkin’s sweet, silky texture and warming spices. Tiramisu is one of those recipes. Ingredients

  • 16 ounces mascarpone cheese
  • 1 cup canned pumpkin
  • ½ cup light brown sugar
  • 2 teaspoons ground cinnamon
  • ½ teaspoon ground nutmeg
  • ¼ teaspoon ground ginger
  • ¼ teaspoon ground allspice
  • ¼ teaspoon ground cloves
  • 1 cup strong brewed coffee
  • ¼ cup coffee liqueur (such as Kahlua)
  • 2 cups heavy cream
  • ¼ cup granulated sugar
  • 2 teaspoons vanilla extract
  • 54 ladyfinger cookies (about 16 ounces)
  • Additional cinnamon and chocolate shavings to top (optional)

Instructions

  1. In a large bowl, combine mascarpone, pumpkin, brown sugar, and the spices until smooth and well blended. In a separate bowl, whip the heavy cream with granulated sugar and vanilla until stiff peaks form. Fold half of the whipped cream into the pumpkin-mascarpone mixture to create a light mousse; reserve the remaining whipped cream for topping and chill it until needed.
  2. Stir together the brewed coffee and coffee liqueur. Quickly dip the ladyfingers into the coffee mixture (don’t soak them) and arrange a single layer in a 13×9″ dish. Spread half of the pumpkin mousse over the ladyfingers, then repeat with another coffee-dipped layer of ladyfingers and the remaining mousse. Smooth the top and refrigerate for at least 2 hours or overnight to set.
  3. Before serving, pipe or dollop the reserved whipped cream over the tiramisu and dust generously with cinnamon and chocolate shavings. Serve at room temperature for best flavor.
