Today marks the start of Frozen Treat Week. I’m excited to be co-hosting this event with Katie and a host of fellow bloggers. To kick things off I’m sharing a refreshing mango margarita boozesicle. I love cocktails, so I wanted at least one frozen treat this week to include a little booze.
I couldn’t find my regular ice pop mold, so I used small waxed paper cups and paper straws instead. They worked perfectly and added a cheerful touch of color to the treats.
We have some great giveaways lined up this week. Mango Margarita Boozesicles
These mango margarita boozesicles turn a classic cocktail into a frozen, boozy summer snack. Bright, fruity, and easy to make.
Yield: 4 boozesicles
Prep Time: 5 minutes
Cook Time: 6 hours
Total Time: 5 minutes plus freeze time
Ingredients:
- 2 1/2 cups fresh cubed mango
- 1/4 cup fresh-squeezed lime juice
- 2 tablespoons tequila
- 1 tablespoon triple sec
- Pinch of kosher salt
- 1–2 tablespoons sugar (optional, depending on mango sweetness)
Directions:
Place all ingredients in a blender and puree until completely smooth.
Pour the mixture into popsicle molds or small waxed paper cups (Dixie cups work well). Insert wooden sticks or paper straws into the center. The mixture is thick, so the sticks should stay upright. If a stick won’t stay in place, cover the cup with a small piece of foil and pierce the stick through the foil to hold it steady.
Freeze overnight or for at least 4–6 hours, until fully set.
Notes: If you don’t have wooden ice-pop sticks, use waxed paper straws, bamboo skewers, or toothpicks for smaller boozesicles.
